Easy Cheesy Chicken

This recipe is soooo good and easy!

Ingredients

4 chicken breasts 
1/2 to 1 cup of Mozerella or Swiss cheese, shredded
2 Tomatoes, sliced (or one can Tomato Sauce)
1 medium Zuchinni, sliced 1/4 inch 
Olive oil (if using whole tomatoes)
Basil and Orageno to season 

Aluminum Foil

Pre-heat oven to 375 

Tear off 4 squares of aluminum foil, big enough to completely wrap and cover each breast.
Lightly flatten chicken breasts.  
Slice diagonally into the top of the breasts and stuff shredded cheese inside.
On the foil, layer Zuchinni and Tomato slices on bottom and drizzle with Olive oil. Place chicken on top and drizzle with olive oil (this helps keep chicken moist) then sprinkle with spices.
If using Tomato sauce I layer it with the Zuchinni and put some over the chicken to prevent drying, then sprinkle with spices.
Wrap the foil around the top of the chicken, so that it is completely covered. 

Bake 25 to 30 minutes or until chicken is not longer pink in center. Remove packets from oven. Carefully open one end of packets to allow steam to escape. Open packets and transfer contents to serving plates.

Brazilian Chicken

Ingredients

1 lemon
1 lime
1 small can tomato sauce
1 can frozen orange juice concentrate
1.5 cloves garlic, minced
1 teaspoon dried Italian seasoning
4 boneless, skinless chicken breast halves
1 teaspoon hot pepper salsa
3/4 cup chunky salsa

Directions
Grate the zest of the lemon and lime into a resealable bag. Squeeze the juice from both fruits into the bag, and throw out the pulp and the seeds.
Mix in everything else except the chicken and salsa.
Drop in the chicken, reseal the bag, and refrigrate for a few hours.
Grill the chicken, turning and basting with marinade a few times, for 10 to 15 minutes or until the center is no longer pink. Serve with salsa.

Benefits of Using Peroxide

I would like to tell you of the benefits of that plain little old bottle of 3% peroxide you can get for under $1.00 at any drug store.

1. Take one capful (the little white cap that comes with the bottle) and hold in your mouth for 10 minutes daily, then spit it out. (I do it when I bathe)
No more canker sores and your teeth will be whiter without expensive pastes. Use it instead of mouthwash. (Small print says mouth wash and gargle right on the bottle)

2. Let your toothbrushes soak in a cup of 'Peroxide' to keep them free of germs. Dirtiest thing in the bathroom, toilet included, according to some research.

3. Clean your counters, table tops with peroxide to kill germs and leave a fresh smell. Simply put a little on your dishrag when you wipe, or spray it on the counters.

4. After rinsing off your wooden cutting board, pour peroxide on it to kill salmonella and other bacteria.

5. I had fungus on my feet for years - until I sprayed a 50/50 mixture of peroxide and water on them (especially the toes) every night and let dry.

6. Soak any infections or cuts in 3% peroxide for five to ten minutes several times a day. My husband has seen gangrene that would not heal with any medicine, but was healed by soaking in peroxide.

7. Fill a spray bottle with a 50/50 mixture of peroxide and water and keep it in every bathroom to disinfect without harming your septic system like bleach or most other disinfectants will.

8. Tilt your head back and spray into nostrils with your 50/50 mixture whenever you have a cold, or plugged sinuses. It will bubble and help to kill the bacteria. Hold for a few minutes then blow your nose into a tissue.

9. If you have a terrible toothache and cannot get to a dentist right away, put a capful of 3% peroxide into your mouth and hold it for ten minutes several times a day. The pain will lessen greatly.

10. And of course, if you like a natural look to your hair, spray the 50/50 solution on your wet hair after a shower and comb it through. You will not have the peroxide burnt blonde hair like the hair dye packages, but more natural highlights if your hair is a light brown, reddish, or dirty blonde. It also lightens gradually so it's not a drastic change.

11. Put half a bottle of peroxide in your bath to help rid boils, fungus, or other skin infections.

12. You can also add a cup of peroxide instead of bleach to a load of whites in your laundry to whiten them. If there is blood on clothing, pour directly on the soiled spot. Let it sit for a minute, then rub it and rinse with cold water. Repeat if necessary.

13. I use peroxide to clean my mirrors with, and there is no smearing which is why I love it so much for this. I could go on and on. It is a little brown bottle no home should be without! With prices of most necessities rising, I'm glad ! there's a way to save tons of money in such a simple, healthy manner.

Kid Friendly- Turkey or Chicken Pot Pie

Ingredients

- turkey or chicken breast (need about 1 cups worth)
- cream of chicken soup (small can)
- frozen vegetables (I use half a bag)
- garlic salt (optional)
- 2 pre-made pie crusts

Take cooked chicken or turkey and shred it.
Mix with cream of chicken soup and frozen vegetables.
Put mixture in between the two pie crusts and bake it for an hour at 350.
I season my turkey with sage and curry powder.

Kid Friendly- Homemade Hot Pockets

Ingredients

- crescent rolls (buy the name brand ones, they hold together better)
- your choice of filling (ham and cheese, pepperoni, cheese and marinara sauce, beef and cheese, whatever you want!)

Instead of separating them into 8 separate triangles you keep the two connected and push the creases together.
Put your filling on one side and bring the other side over.
Use a fork to get the crust together.
Cook for 15 minutes, just a couple minutes longer than normal crescent rolls so the middle cooks perfectly!

Ericka's Cooler Ranch Casserole

Ingredients

2 bags Cooler Ranch Doritos
2 cans original Rotel
2 cans cream of celery
2 cans cream of mushroom ( you can do one with garlic_
bag of cheese
chicken breast, as much or as little as you want

Boil chicken breasts and shred.
Preheat oven to 400.
Crush the Doritos. Mix with wet ingredients.
Stir in chicken. Put in 9x13 baking dish. Cover with cheese and bake 25-30 minutes, or until cheese on top is brown.

Brice's Burritos

-1/2 lb ground beef
- velveeta
- 1 box Spanish rice
- refried beans
- lettuce
- tomato
- 6 big tortillas

Brown beef. Season as you want.
Warm up the beans.
Mix velveeta with milk to make it saucy and microwave
cut up lettuce and tomato
make rice according to box.

On the tortilla
spread the beans
add lettuce, tomato
add rice
add beef
add cheese sauce

Roll up burrito and warm on griddle so the side get somewhat crispy.

Emily's Turkey Taco Bake

Ingredients

-1 lb. ground turkey
-1 pack of taco seasoning
-1 can red kidney beans
-1 bag of nacho cheese doritos
-cheddar cheese

Brown the turkey and add the taco seasoning and the beans.
Layer it in the casserole dish, and layer cheese on top.
Crush the Doritos and layer on top of the cheese.
Bake at 350 for 20 minutes.
Serve with lettuce, tomato, sour cream and salsa.

Tamara's Stuffed Peppers

 Ingredients

1 lb ground beef
1/2 c uncooked long grain white rice
1 c water
6 bell peppers whole( I do four & cut them in half)
2 (8 oz) cans tomato sauce
1 tbsp. Worcestershire sauce
1/4 tsp garlic powder
1/4 tsp onion powder
salt & pepper to taste
1 tsp Italian seasoning

*Preheat oven to 350
*Bring rice & water to a boil. reduce heat & cook for 20 min.
*Brown beef til done.
*Clean out peppers (I cut mine in half at this point) arrange in baking dish
*In a bowl mix beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, garlic, onion, salt & pepper. Fill peppers with mixture. Mix remaining tomato sauce & Italian seasoning together & pour over peppers.
*Bake for 1 hour basting every 15 minutes, until the peppers are tender ( I don't think they take as long to cook when cut in half)
*top with cheese ( sometimes I do shredded cheese other times I make a cheese sauce)

Spicy Chicken

Ingredients

4 skinless, boneless chicken breast halves
1 cup French salad dressing
1/4 cup salsa
1 teaspoon dried thyme

Preheat oven to 350 degrees F. Lightly grease a medium baking dish.
Arrange chicken in the baking dish. In a bowl, mix French salad dressing, salsa, and thyme. Pour evenly over chicken.
Cover with aluminum foil, and bake 20 minutes in the preheated oven. Remove foil, and continue baking 15 minutes, until chicken juices run clear. Makes 4 servings

White Chicken Chili

 Ingredients

3 tablespoons olive oil
1 medium onion, finely chopped
1 (4 ounce) can chopped green chiles
5 tablespoons all-purpose flour
1 Tablespoon ground cumin
1 tsp chili powder
2 tsp garlic salt
2 (16 ounce) cans Great Northern Beans
1 (14.5 ounce) can chicken broth
1 1/2 cups finely chopped cooked chicken breast
Shredded Monterey Jack cheese (optional)
Sour cream (optional)
Salsa (optional)

In large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, flour and cumin, chili powder and garlic; cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; cook until hot.
Garnish with cheese, sour cream and salsa, if desired.

Smothered Chicken

Ingredients

4 (6 ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon lemon-pepper seasoning
1 tablespoon vegetable oil
8 bacon strips
1 medium onion, sliced
1/4 cup packed brown sugar
1/2 cup shredded Colby-Monterrey Jack cheese

Sprinkle chicken with salt and lemon-pepper. In a large skillet, cook chicken in oil for 13-15 minutes or until juices run clear; remove and keep warm.
In the same skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 tablespoons drippings. In the drippings, saute the onion and brown sugar until onion is golden. Place two bacon strips on each chicken breast half; top with caramelized onions and cheese. Makes 4 servings.

Easy Cleaning Secrets

  • To clean windows, add a small handful of cornstarch to 3 to 4 quarts of water.  Wash the windows with this solution and dry with a paper towel.  
  • To save $$ on cleaning supplies, use a wet sponge and baking soda to scrub your kitchen sink, bathroom and tile floors.  
  • To clean mini blinds or shutters, use a clean paintbrush.
  • To clean drains of hair and grease, pour 1 cup of baking soda into drain and 1 cup of vinegar.  When it starts to foam, flush the drain with hot water.  
  • When washing windows, pour a little vinegar into a pail of warm water.  This way you won't have streaks.
  • To rid a room of cigarette odor, put a pint of hot water in a bowl and add 3 TBSP of ammonia.  Leave the bowl in the closed room overnight.  Air out the room in the morning.  
  • Use baking soda to polish the chrome fixtures in the bathroom.  Put a small amount on a wet cloth, rub the fixtures and dry with a soft cloth.
  • To wash shower curtains, fill your washer with warm water and add 2 large bath towels, 1/2 cup detergent and 1/2 cup baking soda.  Run through and entire wash cycle.  On the rinse cycle, add 1 cup vinegar. 
    Do not spin-dry or wash out the vinegar.  Hang curtains immediately.  Wrinkles will disappear once the curtains are dry.
  • To remove a soil or grease spot from a nylon or wool rug, just apply cornstarch to the soiled area, rub with a nylon vegetable brush and sweep up with a vacuum.
  • To remove fruit and wine stains from your tablecloth and napkins, cover the stain immediately with salt and let stand a short time.  Wash in cool water.
  • To remove stains from the inside of your dishwasher, fill the soap dispenser with dry orange-flavored breakfast drink mix and run the empty dishwasher through a cycle.
  • To remove rust stains, moisten the stain with lemon juice, cover it with salt and dry in the sun.  Then wash as usual.
  • An uncorked bottle of lemon juice makes an effective bathroom deodorizer.
  • To get onion smell off your hands, wet them and gently rub in salt.  Rinse and wash with your usual soap.

Macaroni 'n' Cheese Pizza

Ingredients

1 pkg (7 oz) macaroni and cheese dinner mix
2 eggs, beaten
1/2 lb ground beef
3/4 cup chopped onion
1 and 1/4 cups pizza sauce
1 can (4 oz) mushroom stems and pieces, drained
28 pepperoni slices
1 cup (4 oz) shredded mexican cheese blend

Prepare macaroni and cheese according to package directions; gradually stir in eggs.
Spread onto a greased 12-in pizza pan.  Bake at 375 degrees for 10 minutes.  Meanwhile, in a large skillet, cook beef  and onion over medium heat until meat is no longer pink; drain.  Stir in pizza sauce.
Spread over macaroni crust.  Sprinkle with the mushrooms, pepperoni and cheese blend.  Bake for 10-15 minutes or until cheese is melted.

The Many Uses of Cucumbers

This information was in The New York Times several weeks ago as part of their "Spotlight on the Home" series that highlighted creative and fanciful ways to solve common problems.

1. Cucumbers contain most of the vitamins you need every day, just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.


2. Feeling tired in the afternoon, put down the caffeinated soda and pick up a cucumber. Cucumbers are a good source of B Vitamins and Carbohydrates that can provide that quick pick-me-up that can last for hours.

3. Tired of your bathroom mirror fogging up after a shower? Try rubbing a cucumber slice along the mirror, it will eliminate the fog and provide a soothing, spa-like fragrance.

4. Are grubs and slugs ruining your planting beds? Place a few slices in a small pie tin and your garden will be free of pests all season long. The chemicals in the cucumber react with the aluminum to give off a scent undetectable to humans but drive garden pests crazy and make them flee the area. (WOW)

5. Looking for a fast and easy way to remove cellulite before going out or to the pool? Coca Cola Chicken

Ingredients

1 lb Chicken thighs
12oz. Coca-cola (DO NOT SUBSTITUTE - NO Pepsi or cheap brands)
10 oz. Ketchup

Bring coke & ketchup to boil, add chicken, reduce to simmer for 1 hour & 15 mins.
Serve on bed of white rice.

Sausage and Crescent Roll Casserole

Ingredients

2 cans crescent rolls
2 lbs. sausage
2 8-oz pks. cream cheese

Brown, rinse and drain sausage. Add cream cheese and heat until melted. Line a 13x9x2 inch casserole dish with 1 pkg of crescent rolls. Pour in sausage mixture. Top with remaining crescent rolls. Bake at 350 degrees for 20 minutes or until brown. Can be made the day before, recipe can also be halved, using an 8x8 pan.

Lizzy's Chicken Alfredo Bake

Ingredients

1 Jar Alfredo Sauce
8 oz Noodles
1/2 package Chicken Breast
1 cup Mozzarella Cheese
1/2 cup tablespoons Milk/Chicken Broth (optional)
1/4 bag Veggie~ Snap Peas
Bread~ Garlic Bread (frozen)

Directions:
Boil your noodles until soft or al dente. Drain them and set aside.
Cut up your chicken (We used 3 breasts) into cubes. Add your chicken, with a little salt and pepper, into a bit of olive oil and cook in a frying pan until beautifully brown.
(Some people boil their chicken. That works too!)
Mix your chicken, noodles, two jars of Alfredo together with a bit of milk/broth. I like to add the milk/broth to help keep this from getting dry.
Put into a baking dish. Sprinkle your mozzarella cheese on top.
Bake at 350 degrees for about 20-25 minutes, when sauce is bubbling and the cheese is slightly brown it is ready! Serve with bread.

Bacon Spaghetti

Ingredients

1/2-1 package bacon
spaghetti noodles (I use enough for 4 servings)
1 large can Italian diced tomatoes

Fry bacon in a skillet. Add tomatoes and juice and simmer together for about 10 minutes.
Cook noodles in a pan until finished. Drain.
Add tomatoes and bacon to the pasta and mix well. Serve.

Mexi-Chicken Soup

Delicious, cheap and EASY zesty soup recipe that uses only 6 canned ingredients! Serve over tortilla chips, and top with shredded Cheddar cheese. Throw away the cans and no one will know that it is not from scratch!

Ingredients:

1 (15 ounce) can whole kernel corn, drained
1 (14.5 ounce) can chicken broth
1 can cream of chicken soup
1 (10 ounce) can chunk chicken
1 (15 ounce) can black beans (rinsed)
1 (10 ounce) can diced tomatoes with green chile peppers, drained

Directions:
Open the cans of corn, chicken broth, soup, chunk chicken, black beans, and diced tomatoes with green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through

Easy Italian Pasta

A little bland, but definitely room for improvement!  Add garlic and onions, or anything else you want to give it more flavor!


Ingredients

2.5 cups cavatappi pasta (8 oz)
1/2 pound sausage
6-7 medium plum roma tomatoes, seeded and diced
1 cup heavy whipping cream
1/2 cup shredded fresh parmesan or mozzarella cheese
seasonings/spices to taste

Directions
Cook and drain pasta as directed on package.
Meanwhile, in large skillet, cook sausage over medium heat until browned. Drain and return to skillet.
Add tomatoes, cream, and drained pasta to sausage. Cook over medium heat, stirring frequently, until thoroughly heated (do not boil!). Sprinkle with cheese and serve.

Chicken Garlic Pizza

Probably my current favorite!

Ingredients

1 skinless, boneless chicken breast half
2 tablespoons butter or margarine, softened
2 cloves garlic, minced
2 tablespoons chopped green onion
1/2 teaspoon dried basil
1 (10 ounce) can refrigerated pizza crust dough
2 roma (plum) tomatoes, diced
1/2 cup chopped fresh cilantro
1/2 cup ricotta cheese
1/4 cup grated Parmesan or Mozzarella cheese

Directions
Place the chicken breast in a saucepan with enough water to cover. Bring to a boil, and cook until no longer pink, about 20 minutes. Drain and cool slightly, then cut into strips.
Meanwhile, in a small skillet over medium heat, melt the butter with garlic, onion and basil. Pour into a chilled dish to cool, and refrigerate until set.
Preheat the oven to 350 degrees F
Roll out the pizza dough, place onto a pizza pan or other baking sheet, and spread the herb butter over the surface using the back of a spoon. Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese.
Bake for 15 to 20 minutes in the preheated oven, until crust is browned and center is cooked through.

Creamy Chicken and Rotini Primavera

Ingredients

1/2 pound dry rotini
2 Tablespoons vegetable oil
1 pound boneless skinless chicken breast - cubed
1 pound frozen vegetable mix - thawed
4 ounces Neufchatel cheese (reduced fat cream cheese)
1/2 cup Italian dressing
1/2 cup milk

Directions
Cook rotini per package directions to desired doneness. Drain well and keep warm. Heat oil in a heavy skillet over medium-high heat. Add chicken cubes and cook until no longer pink. Combine cream cheese, dressing and milk and whisk until smooth. Add thawed frozen vegetables to chicken along with sauce mixture. Stir well and heat through - about 5 minutes. Serve.

Turkey Sliders

Ingredients

Sliders:
20 ounces lean ground turkey
2 Tablespoons grated Parmesan cheese
1 clove garlic, minced
1/2 teaspoon each dried basil and oregano
1 teaspoon salt pepper to taste
16 dinner rolls or slider rolls

Honey Dijon Mayo:
1/3 cup mayonnaise
1 Tablespoon honey dijon mustard

Directions
Combine ground turkey, cheese and all seasonings. Mix together well. Shape turkey into 16 small patties. Place patties on a greased baking sheet. Bake at 350 degrees F for 8 - 10 minutes or until cooked through. Be careful not to cook too long or they will become dried out. Combine mayonnaise with honey Dijon mustard and stir until well blended. Place on rolls and top with Honey Dijon Mayo.

Country Fried Steak

or you can call it Chicken Fried Steak if you want to be incorrect, like my husband =D

Ingredients

  • 1 pound boneless beef top loin
  • 2 cups shortening
  • 1 egg, beaten
  • 1 cup buttermilk
  • salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • 1 cup all-purpose flour
  • 1/4 cup all-purpose flour
  • 1 quart milk
  • salt and pepper to taste 
Cut top loin crosswise into 4 cutlets. Pound each cutlet thinly with a moistened mallet or the side of a cleaver. 
In a large, heavy skillet, heat 1/2 inch shortening to 365 degrees F. 
While the shortening is heating, prepare cutlets. In a shallow bowl, beat together egg, buttermilk, salt and pepper. In another shallow dish, mix together garlic powder and 1cup flour. Dip cutlets in flour, turning to evenly coat both sides. Dip in egg mixture, coating both sides, then in flour mixture once again. 
Place cutlets in heated shortening. Cook until golden brown, turning once. Transfer to a plate lined with paper towels. Repeat with remaining cutlets. Drain grease, reserving 1/2 cup. 
Using the reserved drippings in the pan, prepare gravy over medium heat. Blend in 1/4 cup flour to form a paste. Gradually add milk to desired consistency, stirring constantly. For a thicker gravy add less milk; for a thinner gravy stir in more. Heat through, and season with salt and pepper to taste. Serve over chicken fried steak.

Karra's Frito Bake

Ingredients

2 boxes Kraft Velveeta macaroni (shell noodles and cheese)
1 lb ground beef
pack of taco seasoning
1 can corn
sour cream- to taste
fritos
shredded cheese

- Brown the ground beef and add the taco seasoning. Add the corn.
- Make noodles as box says and then add 2 table spoon of sour cream to make it creamy.
- Take casserole dish and put 1 layer of the mac and cheese down and then 1 layer of beef mixture and then another layer of mac and cheese on top of that.
- Top with shredded cheese and melt in oven at 350.
- Add fritos on top and put back in the oven for few minutes just to heat the fritos.
- You can top the casserole with sour cream if you'd like!

5 Spice Chicken Kabobs

Ingredients

metal skewers are easier to use than wooden skewers, which will burn if not soaked for approximately 20 minutes first.
1/4 cup frozen OJ concentrate, thawed
2 Tablespoons honey
1 Tablespoon soy sauce
1/4 teaspoon five-spice powder
dash ground ginger
1 pound skinless, boneless chicken breast halves (cut into 1 inch pieces)
1 8 oz can pineapple chunks, drained
1 medium green pepper, cut into 1 inch pieces
1 medium red pepper, cut into 1 inch pieces
2 cups hot cooked rice

1. For glaze, in a small bowl combine OJ concentrate, honey, soy sauce, five spice powder and ginger. Set aside.
2. On 6 inch long metal skewers, alternately thread chicken, pineapple, green pepper and red pepper, leaving a 1/4 inch space between pieces.
3. For charcoal grill, grill kabobs on the rack of an uncovered grill directly over medium coils for 12 to 14 minutes or until no longer pink, turning and brushing once with glaze up to the last 5 minutes of grilling.

If its cold out, turn your oven to 350, put kabobs on a cookie sheet (spray with PAM first), pour glaze over kabobs and put in over for 20 minutes, turning them halfway through.

Kat's Taco-roni

Ingredients

1 lb. ground beef
1/2 onion, diced
1 T. chili powder
1 T. cumin
2 t. garlic powder
1 t. salt
1/2 lb. elbow macaroni Use rice pasta for a gluten-free meal!
1 1/2 c. beef stock or broth
1 8 oz. can tomato sauce
1 14.5 oz. can crushed tomatoes
2 c. frozen corn
1 c. shredded cheese
2 cups frozen greens beans

Directions
1. Brown ground beef and onion. Drain. Stir in seasonings.
2. Add noodles, stock, tomato sauce and crushed tomatoes to the skillet. Bring to a boil, reduce heat to low. Cover skillet and simmer, stirring occasionally, until noodles are tender, about 15 – 20 minutes.
3. Stir in corn until heated through. Top with cheese and serve.
4. Cook green beans as indicated by package instructions.
5. Serve Taco-roni with Green Beans.

Sarah's Breaded Chicken over Rice w/ Jalapeno Peach Sauce

Ingredients

Canned peaches (puree them)
1/2 cup seed-less jalapenos (pureed)
2 Tablespoons honey
1 Tablespoon lemon juice

Put ingredients in small pan and cook over low heat until bubbly

You will need three small containers.
1- 2 whisked eggs
1- flour
1- crushed croutons or crackers

Take chicken breast halves and dip in eggs, flour, eggs and then crackers.

Put in a skillet that the bottom of which has been coated with olive oil and crushed garlic. Cook until the middle is no longer pink.

Baked Ziti

Delicious.  'Nuff said.

Ingredients

1 pound dry ziti pasta
1 1/2 tablespoons olive oil
1 onion, sliced
1 teaspoon minced fresh rosemary
4 cloves garlic, chopped
1/2 pound ground beef
1/2 pound ground pork sausage
1 1/2 (26 ounce) jars spaghetti sauce
salt to taste
1 (6 ounce) package provolone cheese, sliced
3/4 cup sour cream
3/4 cup cottage cheese
1 (6 ounce) package mozzarella cheese, shredded
2 tablespoons freshly grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. 

Meanwhile, heat olive oil in large, heavy skillet over medium heat. Cook onion in oil until tender. Stir in rosemary and garlic. Transfer to a small bowl. 

Place ground beef and sausage in the skillet. Cook over medium-high heat until evenly brown. Stir in the onion mixture and the spaghetti sauce. Season with salt. Reduce heat to low, and simmer for 10 minutes. 

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. In the prepared dish, layer 1/2 of the cooked pasta, provolone cheese, sour cream, cottage cheese, and a little less than 1/2 of the meat mixture. Then layer the rest of the pasta, mozzarella cheese, remaining meat mixture, and Parmesan cheese. 

Bake in the preheated oven for 20 to 30 minutes, or until heated through and cheeses are melted.

Curried Honey Chicken

Ingredients
  •  1/4 cup butter, melted
  •  1/4 cup orange juice
  •  1/4 cup honey
  •  2 tablespoons lemon juice
  •  1 tablespoon prepared mustard
  •  1 to 2 teaspoons curry powder
  •  1 teaspoon salt
  •  6 bone-in chicken breast halves
  •  1 teaspoon cornstarch
  •  1/3 cup cold water

In a large bowl, combine the first seven ingredients; set aside 1/3 cup for basting. Dip chicken in remaining butter mixture; place in a well-greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350° for 1 hour, basting occasionally with reserved butter mixture.
Remove chicken and keep warm. In a small saucepan, combine cornstarch and water until smooth. Stir in the pan drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Drizzle over chicken. 
Yield: 6 servings.

Rachel's Enchilada Casserole

ENCHILADA CASSEROLE

4 chicken breasts cooked and shredded
1/2 package of corn tortillas torn into bit size pieces
2 cans of cream of chicken soup
1 can of water (the cream of chicken soup can)
1 can of chopped green chillies
1 or 2 cups of shredded cheese

Mix together until all the tortillas are covered and moist.....dump into 13x9 size pan pour one can of enchilada sauce (red or green) over the top and some cheese cover with foil cook until it starts to bubble about 45 mins at 350.

Penne Pasta Casserole

Ingredients

  • 1- 26oz can spaghetti sauce  1/2 med. yellow onion
  • 1 tbsp extra virgin olive oil
  • 2-3 cloves minced garlic
  • 1/2 box dry penne or other pasta
  • 1/2 cup basil leaves, chopped
  • 1 cup grated cheddar
  • 1/3 lb Italian sausage
  • salt, pepper, sugar- to taste

Get a pot of salted water going. Over low heat in a large skillet, add some olive oil, onion, garlic and a pinch of salt and sweat / simmer that until translucent (you can keep adding some water to prevent it from drying out). Remove to a plate. Add the Italian sausage and brown that. Drain it, return to pan with onion mixture. Add spaghetti sauce, and cook on low stirring occasionally for about 10-15 min. Add chopped basil (and any other herbs or veggies at this point). You may want to alter the flavor with salt, pepper and sugar depending on your spaghetti sauce.

When water boils, add the penne and UNDERCOOK it. How much depends on you and your oven. I just know you don’t need to cook it all the way because it’s going in the oven. When done to your liking, drain pasta and rinse it in cold water, if you like. I know they say not to rinse it, but because it’s a casserole I feel the noodles benefit a bit from a dunk.

Combine spaghetti sauce mixture and noodles together in the pot. In a shallow baking dish (flatter, shallower allows for more cheese browning area - if you like that.) Top with cheese, bake at 350F for about 30-45 minutes. You might want to cover lightly with aluminum foil until the last 10 minutes. You can also blast it in the broiler if you like the top extra crunchy.

One Housewife's Confessions

I am pretty new to the whole housewife business.  In fact, whenever I call my mother to tell her how I just finished canning homemade jelly, or just got home from a couponing class, she is still in complete disbelief that I am her daughter.  It comes as quite a shock to me somedays, too.  I don't think anyone could have predicted 5 years ago that I would be married to my high school sweet heart, a Navy wife, a stay-at-home mom to my beautiful princess and a housewife. 
A lot of people get bored being a stay-at-home mom.  I find that most days there are not enough hours in the day to get everything done that I wanted to get done.  So this blog will be some tips and tricks I've come across along the way, and a lot of recipes.  I had another recipe blog, but wanted to re-do it so its easier to access and find the recipes.
